Mac N Cheese N Cauliflower
- 1 lb penne pasta
- 1 head of cauliflower, cut into florets
- 1 tbsp olive oil
- 2 tbsp butter
- 1 small onion, finely chopped
- 3 tbsp flour
- salt and pepper to taste
- 1 1/2 cups milk
- 1 cup vegetable broth
- 1 lb Gouda cheese, grated
- Cook pasta according to package directions. Add cauliflower florets during the last 3 minutes of cooking.
- In a medium saucepan over medium heat, add the olive oil and the butter. Add the onions and cook for about 3 minutes. Add the flour, salt, and pepper and cook for about 2 more minutes. Add the milk and vegetable stock and cook until sauce starts to thicken.
- Stir in Gouda cheese, until melted and creamy. Add drained pasta and cauliflower. Yum!
